This immersive 2-day gelato masterclass is designed for aspiring gelato makers, chefs, business owners, and enthusiasts looking to deepen their understanding of authentic Italian gelato and sorbet production.

What the Masterclass Covers

Morgan Morano teaches the science and technique behind professional artisan gelato — from balancing recipes and understanding key ingredients to achieving excellent texture and flavor through traditional Italian production methods. Students also gain valuable real-world insight into running a successful gelateria and leave with a comprehensive gelato science guide and recipe book.

Throughout the masterclass, students receive hands-on experience working with professional gelato equipment including batch freezers, display cases, and blast freezers while learning proper extraction, scooping, and garnishing techniques used in artisan gelato shops around the world.

Classes are hosted in partnership with Modalita in Brooklyn, New York.
